amazing vegan faux aioli

Everyone loves this. This is my own recipe, adapted from an interesting but (in my opinion) flawed one from "The Voluptuous Vegan." I hate store-bought mayonnaise and cannot stand it in any quantity or form, but I love real mayonnaise, made fresh with eggs and oil, and I love even more real aioli because I love garlic. However, real aioli and real mayonnaise are not healthy foods. This one is. This makes a large batch which will last for quite a while.

1 block silken tofu (I use low-fat tofu). This MUST be "silken" tofu, NOT
regular tofu.
1-2 garlic cloves
1/4 C extra virgin olive oil
Salt
1 T fresh lemon juice

Blend the fuck out of all the combined ingredients. Refrigerate.

HEY! I've drooled patiently enough for what, 8 years now?, reading your food related thoughts. It's damn near time you make me something yummy- (obviously something deliverable to Vermont). I can't stand it. Your lemon inspired post has put me over the edge. You know, I could not get enough of homemade lemonade while pg with Chloe (and Newmans Own would do when I couldn't find nice lemons to work with). It was my BIGGEST craving. I can't afford the fucking airfare, so send me a cookie... will you.
